Fat Thursday - Tłusty Czwartek - 'Recipe for Faworki'

Today is Fat Thursday!

Dzisiaj jest Tłusty Czwartek!



In Poland we celebrate it every year just before Lent. It's a day when you can gorge yourself with various goodies. Traditionally people used to eat fat meals this day but nowadays we usually eat sweet iced doughnuts with rose hip jam filling (pączki) and faworki. 

Perhaps the better name would be 'Sweet Thursday' :)

W Polsce świętujemy Tłusty Czwartek każdego roku przed rozpoczęciem Wielkiego Postu. Jest to dzień, w którym można się 'obżerać' różnymi smakołykami. W przeszłości ludzie jedli tłuste posiłki, ale współcześnie jada się przede wszystkim słodkości, np. lukrowane pączki z nadzieniem z róży czy faworki.

Może lepsza nazwa na ten dzień byłaby "Słodki Czwartek' :)

Faworki

Faworki (or chrust as some people call them) are my favourite sweet treat on Fat Thursday. They're thin and crisp pastry sprinkled with powdered sugar. 
The name faworki comes from ribbons which were attached to clothing in Medieval times. Chrust, on the other hand means brushwood or simply dry branches.

Faworki are very easy to make and contain almost no fat at all because of a little trick.

Ja tego dnia najbardziej lubię faworki, albo chrust - jak niektórzy mówią, bo są kruche, lekkie i posypane cukrem pudrem.
Nazwa faworki pochodzi od nazwy wstążek dawanych w Średniowieczu. Chrust, to po prostu cienkie gałązki.

the recipe / przepis:



You'll need:

- 3 cups wheat flour
- 6 yolks
- 2-3 tablespoons sour cream
- 1 shot glass strong spirit alcohol (it can be synthetic vinegar as well) - this prevents the absorption of fat
- 1 teaspoon baking powder

- 3 szklanki mąki pszennej
- 6 żółtek
- 2-3 łyżki stołowe śmietany
- 1 kieliszek spirytusu (można dać także ocet spirytusowy) - to powoduje, że tłuszcz nie wsiąka w ciasto.
- 1 łyżeczka proszku do pieczenia




- about 300g lard for frying (it can be oil as well, but in Poland we traditionally use lard for Faworki)

- kostka lub ciut więcej smalcu (można także smażyć w oleju, ale tradycyjnie dawało się smalec)



Preparation / przygotowanie:

Mix all ingredients and knead a dough.

Mieszamy wszystkie składniki i zagniatamy z nich ciasto.




Beat the dough with your fist or a rolling pin until it becomes softer.
Roll it thinly and cut long stripes. Make a slit in the middle of each one and twist the end through.

Uderzamy wielokrotnie wałkiem lub pięścią w ciasto, dzięki temu stanie się bardziej miękkie.
Rozwałkujemy cienko i tniemy w długie paski. Na środku każdego paska wycinami linię i przekładamy przez nią jeden koniec faworka - wywijając go jednocześnie w taką wstążeczkę.





Deep fry them in hot lard or oil for couple of seconds, they will rise quickly. Turn them over when they become golden.

Smażymy na głębokim tłuszczu przez kilka sekund - do minuty, one bardzo szybko rosną. Gdy tylko się zarumienią przewracamy na drugą stronę.


Put them on a paper towel to remove the excess of fat.

Odkładamy na ręcznik papierowy, aby pozbyć się nadmiaru tłuszczu.


Sprinkle with powdered sugar and they're ready to eat!

Posypujemy cukrem pudrem i faworki sa już gotowe :)



With the remaining 6 egg whites I've made meringue cookies  (bezy)  :)

Set the oven to 110C degrees. Beat whites with 200g of sugar to a froth. Form the froth into small ball-like cookies and place them on a baking tin, bake for 1.5 hours. After 1.5 hours meringues will be crisp outside and soft inside, after 2 hours of baking they will be all dry and crisp. I prefer them soft inside, it's up to you how long will you bake them.

Z pozostałych 6 białek zrobiłam bezy.

Nastawiamy piekarnik do 110C stopni. Ubijamy białka z 200g (lub nawet i 250g) cukru na pianę. Nakładamy łyżką pianę na blaszkę formując bezy. Pieczemy 1.5 godziny. Po 1.5 godzinie bezy są chrupkie z zewnątrz, a miękkie w środku, po 2 godzinach będą suche na zewnątrz i suche wewnątrz. Ja wolę miękkie w środku, ale to od Was zależy jak długo je będziecie piec.

    1. Yes, I think it's the same :) Only date differs. Fat Thursday is on the 1st Thursday before Ash Wednesday and Shrove Tuesday precedes Ash Wednesday.
