Sponge 'Babka' cake - the recipe



Some of you asked me to share the recipe for babka cake.
Babka or baba is a traditional cake in Slavic countries. Babka or baba means 'old lady' or a 'grandmother'. It's especially made with yeast and icing for Easter Sunday. More interesting information you can read on wikipedia: Babka cake

I made my babka with no yeast but with a sponge, and I made it much smaller than the usual Easter babka.


The recipe:


 

Sponge babka cake

5 eggs
150g powdered sugar  (5.3 oz)
150g wheat flour          (5.3 oz)
50g cooled melted butter  (1.75 oz)
15g cocoa                       (0.5 oz)
3 tablespoons hot water
1 teaspoon baking powder

Set the oven to 160C  (320F)
Grease the cake tin with butter (I used a bundt babka tin, but it can be any tin)




Separate egg yolks from the whites.
Pound yolks with sugar and add 3 tablespoons of hot water. Stir.
In a separate bowl beat the whites to a light froth.
Mix flour and baking powder with yolks.
Gently mix the froth with yolks and add cooled melted butter. Mix gently all together.

Pour 3/4 of the batter into a tin, the remaining 1/4 of batter mix with cocoa. Pour the cocoa batter into a tin.
Bake for 30-35 minutes.

And that's it! :)
